Wake Guru Chocolate Bliss

Chocolate Coconut Pie: Delicate oat-almond crust, patient coconut-cocoa filling with dark chocolate, and a final touch of cream, a sweet reminder of life’s patience and love.
Ingredients:
Crust:
  1. 1/2 cup oat flour ground gf oats
  2. 3/4 cup almond flour ground almonds, grind with some oats or starch for a finer grind
  3. 1 Tbsp cornstarch
  4. 1 Tbsp flax meal
  5. 3 Tbsp sugar
  6. 1/8 tsp fine sea salt
  7. 1/4 cup cocoa powder (1 Tbsp more for dark chocolate crust)
  8. 1 Tbsp solid coconut oil
  9. 1 Tbsp olive oil
  10. 1-2 Tbsp almond milk
Filling:
  1. 15 oz can full fat coconut milk
  2. 1.5 Tbsp cornstarch
  3. 1 Tbsp cocoa powder
  4. 1/4 cup ground raw sugar
  5. 3 oz Theo 70% or 85% dark chocolate bar 2/3 cup or 3 oz chocolate
  6. 3 Tbsp vegan semisweet chocolate chips
  7. 1 Tbsp coconut oil
  8. 1 tsp vanilla extract
Instructions:
CRUST

In a bowl, add all the dry ingredients and whisk. Add in the oils and mix until crumbs.
Add the almond milk and mix into a smooth stiff dough. Roll out the dough between 2 parchment sheets to slightly larger than a 9 inch circle. Place in a greased pie pan and shape and seal edges. Chill for half an hour in the refrigerator. Prick holes. Bake for 16-17 mins at pre-heated 350 degrees F / 180ºc.
FILLING

As you prepare the filling, remember that every ingredient plays a role, just as every person in your life has a unique purpose.
Heat the coconut milk, cornstarch, sugar, and cocoa powder in a pan, and whisk them together. The mixture will thicken as it starts to simmer. Allow it to simmer for another minute, about 8 to 9 minutes in total.

Add the dark chocolate, semi-sweet chocolate, coconut oil, and vanilla. Let them sit for a minute
While you stir this mixture in a figure-eight pattern, consider incorporating a Wahe Guru mantra. Chanting the mantra as you stir can bring a sense of peace and harmony to the process, until all the chocolate melts and the filling becomes smooth. 
Taste and adjust the sweetness.
Pour the filling into the baked and cooled pie shell for a few hours or freeze it for 1-2 hours to make it easier to slice.Slice, let it thaw slightly, and serve. Decorate with cashew cream or whipped coconut cream as a final touch of love and care in your journey.
